Paperwork, good tips etc. Have already booked a hotel but not sure of any other procedure

1. Car
Make sure you insurance is up to date, breakdown recovery.
Check the spare wheel. Headlights need to be corrected and for this you can buy a cheap kit.
In Spain you need to carry 2 reflective triangles, reflective jackets and spare bulbs, not sure about France but check it out. I think your best bet would be to phone the AA or RAC

You can print driving instructions from either of the above
Take your passports and copies of in case of loss or theft. Same applies to credit cards, write details down and keep safe.
2. Children
Take things to keep them occupied during the journey.
Jot down a list of games to play.
Take plenty of baby wipes or similar,and drinks, non fizzy.
Plasters for minor grazes and maybe some antiseptic lotion.
Travel sickness tablets if needed and plenty of sun tan lotion.
Try and keep to a diet as close to what you have been used to at home to avoid upset tummies.
3. Yourselves
Wear comfortable clothes and more importantly comfy shoes because you will be queuing for long periods. You may also consider taking one of those little fold up seats

This is for EuroDisney:

Get there EARLY! When we went we got there about 30mins before the park opened and a good portion of the parking lot was already full and crowds of people were standing in line to get in.

When you pay for your park passes, get a map, pick a section you want to see first and head immediately there. After you've been there a bit and they start offering fast passes, sign up for them on the rides you want, then go wait in line for other rides. By the time it's your turn for the fast pass ride, you will have gone on 2-3 other rides.

Food in the Disney parks can get quite expensive, so take a couple of snacks for you (granola bars, etc.) and take some bottled water. I don't know if you'll be able to do this, but we freeze them, then let them thaw out & have iced water to drink. You might also want to eat breakfast before going to the park.

A triangle and a set of replacement bulbs in addition to what others have said.
Tell your partner not to be afraid to tell you that you're driving on the wrong side of the road!
But the most important thing to take is CARE.
