Since most, if not all, countries have a national flag, there would be NO unique national flag, or you could take the view that since each national flag is different from ALL the others, every flag is unique.
For the most interesting, that would be a personal decision. What is interesting to one person is not necessary interesting to another.
I suggest you go to a library and get a book that shows every countries national flag and look them over and decide for yourself which is the most interesting.

The Philippine flag represents the whole archipelago hence, the 3 stars symbolizing the 3 big islands: Luzon, Visayas and Mindanao. The sun represents everlasting light shining on the country. The flag can well be a symbol of independence, not only from Spain but from any other country in the globe. As to your other question, modern Filipinos do not look at the Spanish or Spaniards with hatred because of the past. Filipinos have short memories, you know. They even forgave the Marcoses of their crime that happened in the '70s, how much more for the Spaniards whose atrocities against the Filipinos occurred more than a century ago. Filipinos have Spanish-sounding names because they were given them by the Spaniards during the colonial days through registration. Spanish influences are very much evident through some Filipino customs and practices. Also, in some architectural structures of homes mostly seen in far-flung towns and barrios which, unfortunately, have become a rare sight today because either owners have not properly maintained these houses or left them to deteriorate through the years.

Every flag has its history and symbolism. But if you look at which flag has reached a cultural icon not just in its own country but in many others also it has to be the Union Jack, it is a fashion item as well as a symbol. Where I live in Thailand there are many, many people walking around with the Union Jack on T-shirts, bags, even on motorcycle helmets and I see this in many Asian countries. And of course it appears in the canton of many other nations and territories flags too.
It also is an interesting design solution to a difficult problem.
But for me then it has to be the RED DRAGON of WALES. This has a longer history than the Union Jack and before the Scottish Stuarts came to the throne of Great Britain it appeared on the royal coat of arms as a supporter of the shield (the fluer de lys). It was removed by the upstart James Stuart.
The dragon can be traced to the Roman legions who invaded the UK over 2000 years ago, so the DRAGON must be the oldest symbol of nationhood in the UK, if not the world.
BTW the Kingdom of Butan also has a dragon depicted on their flag but it is a very Asian and scrawny thing.

Worldwide, most people would likely say Canada. You don't see a big bold leaf anywhere else. Mostly it's just a configuration of stripes, religious symbols, or coat of arms. If you're used to seeing the Canadian flag, you might not even think about it, but if you step back and take a look at all the nation's flags, you can easily see that it's quite unique, not only in design, but in what it seems to portray. Most flags meanings are political, but this one just celebrates nature.

I think that is very personal and it depends on what you expect to see on a flag (history, colour, simplicity, symbolism...)
In my personal point of view, I prefer a flag that shows a little of the country's history and motivates me to research more. So I must say, that my favourite flag is the Portuguese, as every single item has a meaning (and it has a lot of items on that flag) and it has evolved from the creation of the country until today. I think Brazil's flag is very unique, as well as Tibet's flag (before it was attacked by Chinese troops and annexed to China)
