Your dog will need to take a test so that the dog can be evaluated for its ability to work with people. It is the CGC test along with additional exercises. You will need to find an evaluator in your area, here is a link for TDI and Delta Society they have all the info on their websites, along with the testing requirements and they also have evaluators listed for each state:

My shepherds are registered with TDI and it is a rewarding experience, I wish you lots of luck.

Go to the AKC website. They have a section about both therapy training and good citizen training. I think you can do all the training yourself, but the requirements are fairly rigorous. Your dog has to follow your commands immediately and must be friendly towards all friendly strangers. They can't bark and they can't seem nervous or they will fail the test. Good luck though, dogs are really beneficial and you're doing a good thing. I thought about trying to train my dog to do it, but he's way too protective of me. He doesn't easily accept strangers and I'm not sure that is something I want to train out of him.

I would suggest milking your dog. Make a video of you milking the dog and send it out to the person's in charge of selecting which dogs to use for therapy.
