tell me the answer in a simple ways like the recipe book does.

One way is to add about 1 to 1-1/2 teaspoons of vanilla or other flavourings that would be suitable for pancakes. Try using buttermilk.

Our basic pancake recipe is as follows:

1 cup of flour
2 eggs (try beating the whites separately till they peak and then fold them into the batter after blending everything else, including the yokes).
2 T. butter
2 t. baking powder
1/2 t salt
1 cup warm milk

We also have put in chopped up fruit after the batter is blended like apples and added cinnamon (and sometimes a little brown sugar) to the dry ingredients before adding any liquid. We serve with yogurt or jam or peanut butter (whole wheat pancakes, Adam's nat. p'butter and real maple syrup. Sometimes it just doesn't get better than that. Add a nice hot mug of hot coffee or tea and maybe some hashbrowns and/or sausage/bacon with a glass of fruit juice and that's a great breakfast.

After trying many homemade pancake batter recipes, I've found that my family prefers the Ultimate Melt-In-Your-Mouth Pancakes recipe by Bisquick. (It is listed on the side of the box of Bisquick; just follow the basic pancake recipe and add the ingredients listed to make them into the Melt-In-Your-Mouth version.) The recipe link is listed under sources.

How to cook them is also listed in the recipe, but here are the basics. These directions apply to just about any pancake batter recipe, not just the Bisquick one.

Preheat your griddle pan (or, if you have an electric griddle, it works great for making several pancakes at a time) and grease with vegetable oil, shortening or non-stick spray. (You may prefer the taste of butter to grease the griddle, but butter will brown fast, and oil and shortening won't.) Surface is ready for cooking when you drizzle a few drops of water on the top and they sizzle and "dance" and evaporate. (If you don't have a flat griddle pan or electric griddle, use a large greased skillet.)

Pour prepared pancake batter, using less then 1/4 cup for each, onto hot griddle. Cook on that side until the edges are dry and the uncooked surface of the pancake is filled with bubbles. Flip with a flat spatula and cook second side until golden. To keep warm, place cooked pancakes in a single layer on a cookie sheet, cover with aluminum foil, and place in 200 degree oven for up to 10 minutes.

Basic Pancakes

INGREDIENTS:
2 cups all-purpose flour, stirred or sifted before measuring
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, slightly beaten
1 1/2 cups milk
2 tablespoons melted butter

PREPARATION:
Sift together flour, baking powder, and salt. In a separate bowl, combine egg and milk; add to flour mixture, stirring only until smooth. Blend in melted butter. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake.
Cook until brown on one side and around edge; turn and brown the other side. Recipe for pancakes serves 4.

Buy a box of Pioneer Baking Mix...on the baking aisle in your local grocery store...and follow the directions. Best pancakes and waffles ever.
