Nebuchadnezzar king of Babylon was a pagan king and meat was scarce for the average meal and was supposed to bring strength. The meat may have been pork? Most likely it was sacraficed to thier God and he was true to his God.

Apparently, they were not kosher. It was common in those days, for instance, for meat and wine to be offered to idols, plus there were specific restrictions on what type of meats the Israelites were supposed to eat, and even on cooking methods (for instance, a calf could not be cooked in its mothers milk- Exodus 34:26).
Check out the laundry list of restrictions in the book of Leviticus, especially Leviticus 11 for meat restrictions.
This is why Daniel did not want to "defile himself" with the kings meat and wine.

To prove to the king and his servants that his God was the true God. See Daniel and the Israel was in captivity and their captors wanted them to worship their gods. Daniel made a deal with one of the kings men and said we will eat only veggies and fruits for 21 days and if we look better then you guys then we get to keep worshiping our God but if you guys look better than us we will worship your gods. At the end of the 21 days Daniel and his people looked better than the kings men that ate meat and drank wine.
