I am obsessed about finding the best foods and brands that I can reach (call me a foodie), and I hear that the majority of soy sauces are just salty, factory enhanced, artificial black water. Where can I find the REAL stuff, without all the preservatives, extra salt, etc. I would preferably like one that was made with super traditional methods...I suspect that one would taste absolutely phenomenal.

Cheap soy sauces can be distiguished by looking in the ingredients list... many cheaper brands are made from hydrolysed soy protein are typically colored with caramel coloring.
Compare LaChoy (cheap) to Kikkoman (better) and you'll see what I mean.
There are many types of soy sauces and it comes dow to what you like since the process generates very different results in taste.
The one's I have are
Chinese Style:
Pear River Bridge Superior Soy Sauce - a light soy sauce that is mainly salty.
Pear River Bridge Superior Dark Soy Sauce - a dark soy sauce mainly used in marinades and sort of like a coloring in stir fries.
Japanese:
Kikkoman - general all-purpose light soy sauce.
Hawaiian:
Aloha Brand Shouyu - I mainly use for marinading.
Personally, I currently like Kikkoman since it has more flavor than the Superior Soy Sauce. However, Superior is what I grew up with and I still use it, but not as much.
Also, I've read a review that Lee Kum Kee Soy sauce was pretty good, but I haven't tried it yet.
Just avoid the one's that are color enhanced with caramel and use soy protien.
Look for brands that claim to be "brewed" or "naturally brewed".

Go to your local Asian or health food store and find some Tamari. It's all-natural soy sauce. It naturally has less sodium (but still has a bit) and it cooks well. If you've ever stir-fried with soy sauce, you know that it often evaporates and changes flavor soon after it hits the heat. Tamari doesn't do this.
Granted, you will pay a bit more for it, but it's excellent. I've been using it for years and I will never go back to the "regular" kind.

Check labels until you find one with the following word prominently displayed, 'Kosher'. Trust the Rabbi to ensure
super traditional methods are followed making soy sauce.

www.alohashoyu.com This company makes shoyu locally here in Hawaii. I tastes "different" than the shoyus made in Japan but most of the local people seem to prefer this brand.

Go to an Asian grocery store, or in any of the organic sections of most major grocery stores they have a few different selections.
