This is an article I found about eggs at What's Cooking America.

Eggs can be frozen, but not in the shell. It's best to freeze eggs in small quantities so you can thaw only what you need. An easy way to do this is to put them in an ice cube tray. Once frozen, transfer them to a freezer container and label.

As with any frozen food, it is best to thaw eggs in the refrigerator and use them as soon as they are thawed. Only use thawed eggs in dishes that will be thoroughly cooked.


Following are some easy instructions for freezing eggs:

Whole Eggs: To freeze whole eggs or yolks crack them into a bowl and gently stir to break up the yolk somewhat. Try not to incorporate air into the eggs. Label the container with the date and the number of eggs. They can be kept frozen for a year, and should be thawed in the refrigerator the day before you intend to use them.

Egg Yolks: To inhibit yolks from getting lumpy during storage, stir in a 1/2-teaspoon salt per 1-cup of egg or yolks. If using for desserts, use 1-tablespoon sugar or corn syrup per 1-cup yolks or whole eggs. Label the container with the date and the number of egg yolks. Use up extra egg yolks in recipes like sauces, custards, ice cream, yellow cakes, mayonnaise, scrambled eggs, and cooked puddings.

Egg Whites: Raw egg whites do not suffer from freezing (cooked egg whites are very rubbery). No salt or sugar is needed. Break and separate the eggs one at a time, making sure that no yolk gets into the whites. Pour into trays and freeze until firm. Label the container with the date and the number of egg whites. Use up extra egg whites in boiled frostings (i.e., 7-minute frosting), meringue cookies, angel food cake, white cakes, or meringue for pies.

Hard-Cook Egg Yolks: Hard-cooked egg yolks can be frozen to use later for toppings or garnishes. Carefully place the yolks in a single layer in a saucepan and add enough water to come at least I inch above the yolks. Cover and quickly bring just to boiling. Remove from the heat and let stand, covered, in the hot water about 15 minutes. Remove with a slotted spoon, drain well and package for freezing.

Hard-cooked whole eggs and whites become tough and watery when frozen, so don't freeze them.

I believe that combining the whites and the yolks by boiling can be frozen for best taste,here's how:

Breaking the yolk without breaking the shell is really simple. Just shake the egg vigorously. The egg is then literally 'addled", with the yolk membrane broken.

This is so easy to do that considerable effort has to be taken to prevent it from occuring when tranporting eggs. Back in the days of horse drawn transport and rough roads it was normal to have at least some of your eggs delivered addled.

Try it yourself. Get a fresh egg, shake it vigorously for a few minutes, then crack it. No special machines or tricks required. I'm actually surpised that so many people have apparently never seen an adled egg. Says something for the quality control and transport of commercial eggs I guess.

Note that addled eggs aren't particularly appealing. Because they are mixed while still liquid you tend to get a plae yellow mess inside the shell, and if it occurs some time before opening there are some chemical reations occur that give the egg an odd flavour. Safe enough to eat but not something I could enjoy.Whole hard-boiled eggs and hard-boiled egg whites become watery and tough when frozen. However, hard-boiled egg yolks and uncooked egg whites are fine to freeze.

To freeze egg yolks, they should be cooked separately in boiling water and packaged in freezer containers. To freeze the whites, they should be packaged separate from the yolks and frozen raw. Yolks must be either cooked ahead or beaten with salt, sugar or corn syrup. Freezing whole eggs involves beating them until just blended and freezing the mixture. Frozen eggs last for up to a year. To use them, it is best to thaw them overnight in the refrigerator or under running, cold water.

I can't think of a single reason why you would want to freeze hard boiled eggs.

Fresh eggs keep for weeks and a hard boiled egg keeps for a few days if you don't shell it. Surely it would take longer to thaw the frozen one than the 15 minutes it would take to hard boil a new one.

Probably, but why? Hard boiled eggs only take about 8 minutes to cook, depending on altitude. Sorry, but I can't see any point in freezing them.

My guess is that you're going to put them in a fish pie or something? My answer is yes. You can even freeze raw eggs, this is great if you only need the yolk you can save the white in the freezer for the next time you want to make a meringue. Good luck and happy cooking!

Yes, if you get them cold enough. But why would you want to freeze them? Boiled eggs will keep in the refrigerator for a long time. Anyone who freezes them flunked out of home economics in junior high school.
