What would be the simplest recipe, and how long would it need to ferment/age? HOw much alcohol content would it have? Thanks.

The quick and dirty is yes.
There's lots more to it, but the basic principle is exactly as you describe. The quality of your cider will be affected by a number of things, but most importantly by the apple juice and the yeast.
Baking yeast will do the job, but not well. If you have a home brewing supply store in your area, then use a brewing yeast...either a cider or ale yeast. When the fermentation is done, baking yeast doesn't fall to the bottom of your brew (flocculate) as readily as brewing yeast does. This leaves your cider cloudy and tasting yeasty.
If what it tastes like doesn't matter and you just want a buzz, then toss a pound of sugar and about 3 tbsp of baking yeast in there and you'll have a nice strong, funky tasting, knock you on your butt brew in about a week to two weeks.
If what it tastes like does matter to you, then take your time, gather the best ingredients (juice, yeast, fermentors, sanitizers, etc.) and enjoy.

If you added yeast to apple juice you will have hard cider in about 3 to 5 days and the alcohol content will be in the 4 to 5% range. So that means it will be about the same strength as a beer.

The simplest recipe would be to take juice and add a package of bakers yeast (found in the baking section of your grocery store).

Then store at room temperature, just make sure you do not store it in a air tight container or the container will EXPLODE.

After all of the bubbling stops, chill the liquid and remove the liquid from the layer of yeast at the bottom of the container.

Then sit back and enjoy!

If you want to produce higher quality hard cider then I suggest you go talk to the people at your nearest brewing supply store
