Its best if you make it a day before and refrigerate - its makes a big difference .. and tastes amazing!

1 c. plain yogurt
1/2 c. sour cream
1 cucumber, grated and squeezed (to get out some of the juice)
1 clove garlic, crushed
Salt and pepper to taste

(gyros are my FAVORITE food ever!) and damnit you made me hungry!

A few ways

Tzatziki

Ingredients

(4 servings)

1 large cucumber, peeled and minced or grated and drained
2 cups plain yogurt (500 ml)
3 garlic cloves, crushed through a press or 4 green onions, chopped
salt and pepper


Instructions

Combine all ingredients in a glass bowl. Mix well and refrigerate. Serve cold.
NOTE: To make an extra-thick sauce, use the richest yogurt available. Place in a cheesecloth-lined sieve over a bowl. Do not stir. Let the yogurt drain overnight at room temperature.
Simmer 3 minutes. Spoon into individual bowls, top with a tsp of soy sauce.

2 cups plain yogurt
1 unpeeled cucumber, finely chopped
2 cloves garlic, crushed, or 2 teaspoons prepared crushed garlic
2 Tablespoons olive oil
1 teaspoon salt
Procedure

In a bowl, add the cucumber, garlic, olive oil, and salt to the yogurt.
Blend well with a fork and refrigerate.
Serve with toasted pieces of pita bread or fresh vegetables, such as carrots, celery, or peppers.
Makes 2½ cups of sauce.

Tzatziki Sauce

INGREDIENTS

* 2 cups plain yogurt
* 2 cloves crushed garlic
* 1/2 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1/4 cup chopped fresh mint leaves
* 1 large cucumber - peeled, seeded and shredded

DIRECTIONS

1. Use a cheese cloth to strain the yogurt over a bowl for 3 to 4 hours, until most of the water has drained.
2. Press excess liquid out of the shredded cucumber. In a medium bowl, stir together the cucumber and strained yogurt. Mix in the garlic, salt, pepper and mint. Chill the mixture for 1 to 2 hours.

I always made it with cucumbers, peeled and seeded, fresh garlic, salt and pepper. Put these ingredients in a food processor and blend. I like my gyro sauce made with sour cream, which I add the cucumber mixture to and fold in. It adds more flavor to the cucumber mixture. Very simple and tasty.

**Pork Gyros with Yogurt-Tomato Sauce
1/4 cup olive oil
1/4 cup dry red wine
4 cloves garlic, chopped
1 tablespoon finely chopped fresh oregano, plus more oregano for garnish
2 (1-pound) pork tenderloins
Salt and freshly ground black pepper
Yogurt-Tomato Sauce, recipe follows
4 grilled pita pockets, for serving
Mesclun greens or baby spinach, for serving
Thinly sliced red onions, for serving
---Wisk together oil, wine, garlic and oregano in a baking dish. Add the pork and turn to coat. Cover and marinate in the refrigerator for at least 4 hours or overnight.
Preheat grill to high.
Remove pork from marinade and season with salt and pepper. Grill until golden brown on all sides and cooked to an internal temperature of 150 degrees F. Let rest 5 minutes and slice into 1/4-inch thick slices.
Build gyros by drizzling each pita with the yogurt sauce, then adding mesclun, onion, and meat. Drizzle with more sauce and garnish with oregano.
**Yogurt-Tomato Sauce:
1 pint Greek yogurt
2 cloves garlic, finely chopped
1 plum tomato, seeded and finely diced
2 tablespoons capers, drained
1 tablespoon finely chopped fresh oregano leaves
1 tablespoon red wine vinegar
1 tablespoon lemon juice
Salt and freshly ground black pepper
--Combine all the ingredients, cover, and let sit in the refrigerator for at least 30 minutes before serving.

1/8 tsp. ground pepper
Stir all ingredients together. Serve gyro in pita bread with tomatoes and lettuce and cucumber sauce. Serving suggestions: Couscous Pilaf and Squash and Tomato Saute.
