I have a plasma ball, can i use a 1200mA 12v adaptor as it is supposed to be a 1000mA 12v adaptor?
I have already tried it and it works fine but will if effect it long term?

That's fine. The adaptor can provide more current that is needed, that's all. This is a good thing.

Having an adaptor with a higher capacity is most likely fine. You should check that the polarity is correct, that the positive and negative voltages are on the right parts of the plug. In most cases, the required polarity will be marked on the device near where the plug goes in, and on the adapter.

[I just noticed that you say it works fine. In that case, the polarity must be correct, so don't worry]

Yes you can, the 1200ma adaptor will in fact last longer ! Cheers Pete
