A large chicken breast will generally get you 8 ounces of chicken once deboned. It is certainly not a thigh. Also, a small breast will not get you 8 oz. How the heck do I know? I was a KFC manager for years and had to effectively calculate weights of deboned chicken out of whatever left over we had. Trust me.

1/8 cup - 1 oz. Or 2 Tbsp.
3/8 cup - 6 Tbsp.
1/3 cup - 5 Tbsp. + 1 tsp.
