My girlfriend made me dinner once. She met me at the door and told me she messed it up. She was only wearing an apron - Just an apron. I have no idea what she made, and I didn't mind in the least.

Get a pork loin from your grocery store's butcher/meat section. It should go in the oven at 325 degrees for 1 hour.

Meanwhile, you need 1 Hidden Valley Ranch's dressing mix packet. (The kind you are supposed to add mayo to.) Buy yogurt or fat free sour cream instead if you are trying to eat healthy, but follow the directions to make the dressing. After it's all mixed up, add 1 to 2 teaspoons of dill weed and stir.

It makes a great dill sauce for the pork.

Dessert is easy. You can make Rachael Ray's tiramisundaes. You need coffee, vanilla wafers, vanilla ice cream, and chocolate syrup or hot fudge.

Place a layer of vanilla wafers in the bottom of the bowl, pour the cooled coffee over the wafers, scoop the ice cream into the bowl, add the chocolate/fudge, and serve.

I'm doing the same for mine tomorrow night: Chicken Parmesan with Coconut Cream Pie for dessert. Go with something you know he likes and you will both enjoy.
Also, try going to allrecipes.com - they have a recipe ingredient search where you put in the ingredients you want to use or not use, I use that a lot to get ideas for dinners & desserts.
Good luck!

How about grilling skewered shrimp and squash and zucchini? You can do them in the oven and they taste soooo good and are so easy. The are done in under 10 minutes. Make them in advance with a little garlic/olive oil marinade. Pop them in the oven for about 10 minutes at 350. Make rice as a side dish! I'd make at least three skewers for him.

Dessert: Make "baked" apples in advance. Core two apples, sprinkle with sugar and cinnamon and pop them in the microwave for 4-6 minutes until soft. Add some caramel sauce and vanilla ice cream!

Just do something you know he will love.

Roast chicken with mashed or roast potatoes, lots of gravy and brownies or apple pie for dessert.
