I'm not sure there is much of a connection between the Byzantine empire and the spread of Islam other than the Byzantinians were ultimately unable to hold off Islamic aggression.

The battle of Tours was in France, and marked the turning point in the Islamic invasion of western Europe. it took place some 700 years before the fall of the Byzantine empire.

For several centuries, the Byzantine empire checked the spread of Islam into South-Eastern Europe. Once the empire fell in the 15th century, Islam was able to expand into the Balkans, and wasn't halted until the 17th(?) century.
