Ginger goes well with sesame dishes. I use it with sesame oil in my stir fry dishes and also as a salad dressing for my citrus salad.

I think Asian when I use ginger, so things like soy sauce and garlic come to mind. I have a great marinade for tuna steaks:
Equal parts soy sauce and rice wine vinegar (1/4 c each)
3 T. sesame oil
2 T. fresh grated ginger
1 T. garlic

Marinate the tuna for about a 1/2 hour in the fridge, grill to med-rare. YUM!

Ginger is one of my favorite spices to use. A great marinade I make for salmon is:
Soy or terriaki sauce
Brown sugar or honey
orange juice
dijon mustard
ginger
granulated garlic
Make into a thick sauce or paste and put on salmon. Broil salmon till done. Will have a crisp coating. Very good eating....

I always buy fresh ginger (organic if possible) and I keep the chunk in freezer ( I never wrap it) I just use it. It's great in stir fry's, oriental food and with rice (add coconut milk instead of water to the rice ~ yummy asian dish).

Using Tamari (Japanese soy sauce) and/or oyster sauce in a stir fry or fried rice is great!!! It will taste even better if you use sesame oil...

Also, you can mix it with lemon for a nice marinade for chicken or beef.

Adding it to virtually any curry in small quantities will help bring out the flavour.
