Fudge and moisture do not mix, No, you can however place the fudge pan in a iced water bath like in the bottom of the sink and it will set-up in about 30 mins

No the fudge should get hard just sitting on the table...If you have to put it in the fridge to do it something went wrong!!

It can be, but if it's the "real" kind and not the condensed milk kind, it might develop that white bloom chocolate gets sometimes.

Yes though it depends on the type you made if it is the kind you make from condescend milk & chcolate chips. Check out eagle brand I make it all the time

it makes no difference how it cools...as long as you wait until it is completly cooled before cutting
