any potato recipes would be appreciated.....i dont care what it is! thanx

"Pizza" Stuffed Potato

INGREDIENTS:
1 baking potato, baked (6 ounces)
1 1/2 ounces mozzarella cheese, shredded,divided
1/4 cup tomato sauce
1/4 cup part-skim ricotta cheese
1/8 teaspoon oregano leaves
1/8 teaspoon garlic powder
2 teaspoons grated parmesan cheese

Preheat oven to 450 degrees.
Cut potato in half lengthwise.
Scoop out pulp from potato halves into a bowl, leaving 1/4-inch-thick shells; mash pulp and reserve shells.
Add 1 ounce mozzarella cheese, the tomato sauce, ricotta cheese, oregano and garlic powder to potato pulp and stir to combine.
Spoon half of potato mixture into each reserved shell; top each with half of the remaining mozzarella cheese and half of the Parmesan cheese.
Set potato shells in 1-quart casserole and bake until thoroughly heated, about 10 minutes.
Serves 2

Spanikopotatoes

4 large baking potatoes
1 small onion, minced
1/2 box frozen spinach, chopped
1 c feta cheese crumbled
salt and pepper to taste
2 (or to taste) tbsp olive oil

Bake potatoes. Allow to cool, cut in half, and scoop out the inside of the potatoes, placing potato in a mixing bowl, and setting the remaining shell aside.

Add remaining ingredients to potatoes in bowl. Stirl well to combine. Place filling back in potato shells. Bake potatoes (350) 15-20 minutes, or until top of filling is lightly browned and heated through.

Old Fashioned Potato Salad

5 potatoes
3 eggs
1 cup chopped celery
1/2 cup chopped onion
1/2 cup sweet pickle relish
1/4 teaspoon garlic salt
1/4 teaspoon celery salt
1 tablespoon prepared mustard
ground black pepper to taste
1/4 cup mayonnaise


Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop.
Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
In a large bowl, combine the potatoes, eggs, celery, onion, relish, garlic salt, celery salt, mustard, pepper and mayonnaise. Mix together well and refrigerate until chilled.

Cracker Barrel Hashbrown Casserole

2 # Bag Hashbrowns, thawed
2 T. Butter softened
2 cans Crm. of Chicken Soup
2 T. Instant minced onion
1.5 cups Sour Cream
8 oz. Shredded Sharp Cheddar, divided
.5 cup (half) crushed Corn Flakes/ Dry Bread Crumbs


Preheat oven to 350*. Mix first 5 ingredients + half the cheese in a large bowl. Lightly spray 9 x 13 pan. Add mixture to pan, sprinkle with reserved cheese and crushed Corn Flakes or crumbs. Bake 45 min.- 1 hour. Serve!

It is always a hit and rarely any leftovers!!

Combine cooled mashed spuds,with drained salmon parsley lemon zest an egg.
Mix to combine. (use your hands)

Form into patties or croquettes.

Season some flour and spread on a piece of baking paper. Roll or turn each to coat evenly, dip in a whisked egg, and then bread crumbs and lower into hot oil, or shallow fry.Until hot and golden.
Do in small batches and drain on absorbent paper and keep warm.

Serve with bread as a snack food.

Alternatives:- Diced cold meat or cooked chicken, diced ham or bacon, or what ever you fancy

These are an excellent snack food. I make up a heap at a time and freeze leftovers, if there are any left.

8 medium red potatoes, scrubbed and cut into wedges
3 tablespoons olive oil
2 cloves of chopped garlic
2 teaspoons crushed rosemary
1 teaspoon salt
Toss potato wedges with oil, place in shallow roasting pan and sprinkle evenly with rosemary, garlic and salt.
Roast in 350 degrees F. oven for 45 minutes to an hour, until golden brown and fork tender.

Here you go. The 1st is my soup recipe. It's awesom. The 2nd I haven't tried yet.

Creamy Cheesy Broccoli and Potato Soup
From the Kitchen of Jane’ Burch

 6 slices of cooked bacon, crumbled*
 2 tbsp. Chopped Onion*
 6 cups Diced Potatoes
 1 ½ c Water
 2 cans Cream of Chicken Soup
 2 soup Cans of Milk
 1 tsp. Salt
 ¼ tsp. Black pepper
 16 oz Velveeta cheese
 2 c. Broccoli, minced


Cook bacon until crisp and set aside. Crumble when cooled. Cook potatoes for 5 minutes from start of boiling. Drain. Combine onions, bacon, potatoes, broccoli, chicken soup, milk, cheese, salt, and pepper. Cook on low heat. Serve when potatoes are done and cheese is melted.

This recipe works best in a crock-pot when cooked all day long.


*3 tbsp. Bacon bits may be used instead of sliced bacon
*1 tbsp. Onion powder maybe used instead
* This receip makes about 10-15 cups of soup. Make sure you have a big enough pot.

Ham-Stuffed New Potatoes

 15 New Potatoes (about 1 ½ pounds)
 1 cup cooked ham, lean, diced
 1/3 cup part-skim ricotta cheese
 ¼ cup reduced fat cream cheese
 1 tbsp. Onions, minced
 1 tbsp. Dijon mustard

Arrange potatoes in a steamer basket over boiling water; cover and steam 15 to 20 minutes or until tender. Remove potatoes from steamer; cool. Combine ham and next four ingredients; set aside. Scoop out centers of potatoes, using a melon-ball scoop or other small spoon. You may want to reserve pulp for another use. Spoon ham mixture evenly into potatoes.

This one I haven't tried yet. But am going to soon.

Slice potatoes (4 large) thin and put in a ziploc bag with 1/2 cup olive oil one teaspoon each galic salt & lemon peper shake well and put in a roasting pan in a 325 oven for 45 min.


I also love galic mashed potatoes take 4 large potatoes in a large pot cover with water add salt and garlic sliced thin. Once soft drain and put in a large bowl with sour cream, butter and milk mash well then whip with a hand mixer put in an oven proof pan top with cheese and broil for five min
