Use LARD. You can buy LARD on the baking aisle. Get a cast iron skillet and fill it half full with Lard. Now, stick a wooden spoon handle side down in the liquid, if bubbles form around the handle your lard is ready to be used.Next fry your chicken in batches.. if you overload the pan it brings down the temperature and the chicken may not get done inside. Be very careful, never leave the pan unattended when frying.

crisco is the best frying medium. butter burns bad and fast. Oil takes longer to break down so its not terrible but its certainly not best. Peanut oil a lot of ppl swear by but for fried chicken its just not best. Crisco will leave your coating light and crispy with no gross taste. It has a high burn temp so its ideal for frying , as all southern cooks know.
remember three things when frying chicken , crisco, temperature (keeping your grease up to temp) and spacing. Dont overcrowd your pan. For best results when frying large quantities of chicken, fry in stages. Drain on wire rack not on paper. This ensures the best draining and your chicken wont get soggy and laden with grease. Also place your pieces in your pan according to cooking time. Dark pieces on the hottest spots white meat on the cooler parts of the pan. ( I know you didnt ask for this but fried chicken is an art and when done well its really not terribly bad for you ) :)

I use oil. It has a higher smoking point. If your pan frying breaded cutlets you could fry in alittle oil and butter for flavor.

I like peanut oil or when you buy oil put fresh herbs in for at least three days before strain before you use. Oh and get a 17 inch frying pan roaster from target. I got one for christmas it has a top and a vent hole I love it.

You need to use oil, butter would burn. My grandmother always would put bacon grease in with the oil, that's the good old fried chicken from the fattening days, LOL!

Use a light colored oil, peanut is best. Make sure that the oil comes half way up the chicken at least.

USE BOTH. Butter will give it a good flavor but since it burns easily, you will need the oil because it can take high temp.
