You can try mixing breadcrumbs with them so the fat is absorbed and kept in the meatball instead of draining while cooking. Hope that helps!

This is the recipe I use for my meatballs, and the secret is to just brown them in a pan and then plop them into your sauce to slowly cook for about an hour or two.

FOOLPROOF MEATBALLS

finely chopped garlic, to taste
1 1/2 pounds ground beef
1 1/2 pounds ground pork
pepper to taste
1/2 cup grated parmesan cheese
1/3 cup dry bread crumbs ( I use the Italian style)
2 eggs
1 TBSP dried Basil
1 TBSP minced chives
salt to taste
garlic powder

Mix all ingredients, form into walnut sized balls. Brown on all sides, and plop into your sauce as you brown them. Let them cook slowly in your sauce for 1-2 hours. Make sure you drain them first B4 putting in your sauce so the sauce doesn't get greasy!

You MUST wet your bread, either milk or water, and squeeze out the extra. Don't forget you'll need breadcrumbs too. Go for 2 slices bread, 1/2 cup breadcrumbs to each pound of meat. Full recipe? 1 clove garlic chopped finely, grated cheese, parsley, s&p and an egg. Fried or baked, these will be great!

I "flash fry" my meatballs. I personally like them a little crispy on the outside and it locks in the juice on the inside. Then put them in the oven to finish cooking them. They will be very juicy.

Soak one slice of bread in MILK then squeeze out all the milk. Add bread into your meatball mixture, along with one egg. This will make it moist, for sure! I do it all the time and everyone loves my recipe :)

How do you make your meatballs? Using moist bread crumbs helps. Cooking them in the sauce after you precook them a little, What size do you make and how hot do you cook them? How do you cook them? Do you also add egg to your meat? I have to what you put in them and how you cook them to help you. Contact me and give me details. Maybe that will help me figure your problem.
