Fortune cookies are cooked on a double sided griddle like a small pancake, but at home you bake them.

Fortune cookies can be tricky to make - it's important to make sure that the cookie batter is spread out evenly on the baking sheet. Instead of using the back of a wooden spoon to spread the batter, it's better to gently tilt the baking sheet back and forth as needed. Wearing cotton gloves makes it easier to handle and shape the hot cookies.

This fortune cookie recipe makes about 10 cookies.
INGREDIENTS:
2 large egg whites
1/2 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
3 tablespoons vegetable oil
8 tablespoons all-purpose flour
1 1/2 teaspoons cornstarch
1/4 teaspoon salt
8 tablespoons granulated sugar
3 teaspoons water
PREPARATION:
1. Write fortunes on pieces of paper that are 3 1/2 inches long and 1/2 inch wide. Preheat oven to 300 degrees Fahrenheit. Grease 2 9-X-13 inch baking sheets.

2. In a medium bowl, lightly beat the egg white, vanilla extract, almond extract and vegetable oil until frothy, but not stiff.

3. Sift the flour, cornstarch, salt and sugar into a separate bowl. Stir the water into the flour mixture.

4. Add the flour into the egg white mixture and stir until you have a smooth batter. The batter should not be runny, but should drop easily off a wooden spoon.

5. Place level tablespoons of batter onto the cookie sheet, spacing them at least 3 inches apart. Gently tilt the baking sheet back and forth and from side to side so that each tablespoon of batter forms into a circle 4 inches in diameter.

6. Bake until the outer 1/2-inch of each cookie turns golden brown and they are easy to remove from the baking sheet with a spatula (14 - 15 minutes).

7. Working quickly, remove the cookie with a spatula and flip it over in your hand. Place a fortune in the middle of a cookie. To form the fortune cookie shape, fold the cookie in half, then gently pull the edges downward over the rim of a glass, wooden spoon or the edge of a muffin tin. Place the finished cookie in the cup of the muffin tin so that it keeps its shape. Continue with the rest of the cookies.

I recently saw a spot on the Food Chanel about how fortune cookies are made. They are definitely baked, not fried. The original ones were folded by hand. Now there's a folding machine that does it and puts the little message inside. Its a pretty cool process.

Fortune Cookies

1 cup sifted all-purpose flour
1/4 teaspoon salt
2 tablespoons cornstarch
6 tablespoons white sugar
7 tablespoons vegetable oil
1/3 cup egg whites
3 tablespoons water
DIRECTIONS
Preheat oven 300 degrees F (150 degrees C).
Stir together sifted flour, salt, cornstarch and sugar.
Add salad oil and egg whites and stir until smooth.
Gradually stir in water just until blended.
Foil cover the cookie sheet. Drop level tablespoon of batter for each of 6 cookies. Use back of spoon to spread batter evenly into 4 inch circle.
Bake for about 20 minutes.
Remove one cookie at a time from the oven with a wide spatula; working quickly follow these four steps: 1. Flip cookie onto cotton gloved hand 2. Hold fortune in center of pliable cookie while folding cookie in half 3. Grasp ends of cookie and draw gently down over edge of muffin pan to crease at center of cookie 4. Fit cookie in muffin pan (points down) to hold shape as it cools If cookie hardens too quickly, return to oven for about 1 minute. Store in airtight container.

The total came out to $19.4 million in unexpected payouts. 89 tickets won $100,000, but 21 additional tickets won $500,000 due to the Power Play multiplier option.

Powerball officials initially suspected fraud, but it turned out that all the winners received their numbers from fortune cookies made by Wonton Food Inc., a fortune cookie factory in Long Island City, Queens, New York. Apparently, number combinations printed on fortunes are reused in thousands of cookies per day. The five winning numbers were 22, 28, 32, 33, and 39. The sixth number in the fortune, 40, did not match the powerball number, 42

OMG you just brought back one of my favorite memories...thank you! When I was a kid, we went on a trip to San Francisco. We weren't big on tours but there was one included that ended with a Chinese Banquet in Chinatown but to eat you had to take the tour...and one of the stops was at a fortune cookie factory.

I am pretty sure it's all done by machine now, (saw a segment on it on TV a year or so ago), but back then there were all these women sitting with wrappped fingers to protect them from the heat, inserting fortunes and folding them as the cookies came out of the oven. It was a hoot to see!

I see you already had the answer, but wanted to say thanks...hadn't thought of this in years. I'll never forget those ladies...what a job eh?

They're baked flat and as soon as they're taken from the oven the fortune is put in and they are bent around it before they harden.
