The K-1 one is the fastest way for you to get here legally. If you enter with a valid K-1 you would not have to return to Italy to wait for the rest of the paperwork to be processed.
If you get married first then you have to wait for her to get an I-130 approved. Then you could apply for a K-3 to enter the U.S. while they do the paperwork they would do after you got married on your K-1 anyways.
If you do get your K-1, don't forget to apply for an advanced parole so you can leave the U.S. and return before the final paperwork is finished processing.

You´re better off with the fiance visa. The spousal visa takes longer.
*You will NOT automatically become a legal resident of the US just because you marry an American citizen. Nothing is automatic and immigration procedures take time and money.

I think if your married in the states, you are automatically legal! you should try for that!
