Golden Potato and Rutabaga Mash:

Ingredients
1 medium rutabaga (about 1 pound), peeled and quartered
1 1/2 pounds Yukon Gold potatoes, peeled
1 cup 2% low-fat milk
1 cup grated Parmesan cheese
2 tablespoons butter
1 teaspoon salt
1 teaspoon freshly ground black pepper

Instructions
1. In a large saucepan, combine rutabaga and water to cover; bring to a boil and cook for 8 minutes. Add potatoes and cook for about 20 minutes or until tender. Drain and place in a large mixing bowl.
2. Heat milk in the microwave. Add about half of the milk to the vegetables and mash by hand. Add Parmesan, butter, salt and pepper to the vegetables, and stir until evenly mixed. Pour in remaining milk, if needed, to obtain a creamy, yet slightly lumpy texture.
Serves 8.

2 medium rutabagas (about 2 lbs)
2 eggs, beaten
1/4 cup dry breadcrumbs
1/4 cup half-and-half
2 teaspoons sugar or corn syrup
1 teaspoon salt
1/4 teaspoon ground nutmeg
2 tablespoons butter

Dice rutabagas and cook by boiling 20 to 25 min.
Or microwave with 1/2 cup water for 15 to 18 minutes.
Mash rutabagas with reserved liquid.
Stir remaining ingredients except butter into rutabagas.
Pour into greased casserole and dot with butter.
Bake 45 to 50 minutes in a 350 degree oven until top is light brown.

Although it is not one of my favorite veggies, I enjoy rutabagas this way.

Rutabaga Bake

1 pound rutabagas
1/4 cup milk
1/4 cup sliced green onion
1 tablespoon butter
2 teaspoons sugar
1/4 teaspoon ground ginger
1/8 teaspoon pepper
1 beaten egg
3/4 cup soft bread crumbs (1 slice)
1 tablespoon butter, melted
1 tablespoon snipped parsley

Wash and peel rutabagas; cut into 1/2-inch cubes. Cook rutabaga, covered, in a small amount of boiling salted water for 30 to 35 minutes or until very tender. Drain well.

In a large mixing bowl mash rutabagas with a potato masher or beat with an electric mixer on low speed. Add the milk, green onion, 1 tablespoon butter, sugar, ginger, and pepper; beat until smooth. Beat in egg. Transfer to a 1-quart casserole.

In a small mixing bowl stir together the bread crumbs, 1 tablespoon melted and parsley. Sprinkle bread crumb mixture over rutabaga mixture. Bake, uncovered, in a 350 degree F oven for 35 to 40 minutes or until top is golden brown.

Rutabaga with Cheese Sauce

INGREDIENTS:
1/4 cup melted butter
1/4 cup all-purpose flour
2 cups milk
1 cup shredded Cheddar cheese
salt and pepper
1 large rutabaga, diced and cooked (4 to 5 cups diced)
1/2 cup soft bread crumbs tossed with 1 tablespoon butter
PREPARATION:
Melt butter in a saucepan over low heat; stir in flour. Continue to cook and stir until smooth; gradually stir in milk. Cook, stirring constantly, until thickened. Add cheese and stir until cheese is melted and sauce is smooth.

Season with salt and pepper to taste. Place rutabaga in a shallow, lightly buttered baking dish; pour sauce over rutabaga. Sprinkle with buttered bread crumbs. Bake at 400° for 15 to 20 minutes. Serves 6.

I got this off a web site, and made it for a side dish for Thanksgiving....I liked it!
