You didn't mention a budget-so I would say FOR SURE The Montage in South Laguna Beach....by far the best hotel in OC! As far as LA goes, Shutters in Santa Monica is nice,a nd for something a bit different (w/a fireplace!) is The Beach House in Hermosa Beach.

Some god ideas out there! I'm surprised how many I've already been to:

Ritz Carlton Laguna Niguel
The Hotel Del Coronado near San Diego, usually just called "The Hotel Del". Is there EVER a bad day there? I've never had one.
The Mission Inn in Riverside- Very nice, with really cool architecture. Old and classy. The salt water pool is most excellent.
How about Prufrock's Garden Inn in Carpinteria, CA? It's by the beach, and in the cute little beach town of Carpinteria. Spent my honeymoon there. Get the little cottage out back for privacy. Step out in the morning and walk to the beautiful beach, just a couple blocks away.

Have fun!

anywhere on the beach is romantic. Marriot huntington beach. There are really nice hotels on the beach with access to the ocean right there up by santa barbara. I saw someone said hotel coronado.. that place is haunted not sure if you believe in that stuff or not.

The Ritz in Laguna is beautiful but expensive, there's also the Hyatt in Huntington Beach, the Wyndham in Costa Mesa and the Roosevelt in LA.

San Diego has a number of romantic hotels that would be perfect. Be sure to catch a San Diego sunset as well....they are spectacular. See http://www.sandiego-romantics.com/san-diego-beach-hotels.html for details on hotels.
