Lemon Coconut Pixies

Ingredients:
1/4 cup (1/2 stick) butter or margarine, softened
1 cup sugar
2 eggs
1-1/2 teaspoons freshly grated lemon peel
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup MOUNDS Sweetened Coconut Flakes
Powdered sugar

Instructions:

1. Heat oven to 300°F.

2. Beat butter, sugar, eggs and lemon peel in large bowl until well blended. Stir together flour, baking powder and salt; gradually add to butter mixture, beating until blended. Stir in coconut. Cover; refrigerate dough about 1 hour or until firm enough to handle. Shape into 1-inch balls; roll in powdered sugar. Place 2 inches apart on ungreased cookie sheet.

3. Bake 15 to 18 minutes or until edges are set. Immediately remove from cookie sheet to wire rack. Cool completely. About 4 dozen cookies.

These are so good, the shortbread part of the cookie is so flaky and this cookie is fairly simple to make.

you'll need....
1/2 cup butter
1/4 cup packed brown sugar
1 egg
1/2 teaspoon vanilla extract
1 cup all-purpose flour
3/4 cup chopped pecans
1/3 cup any jams jellys or preserves (i like grape the best)
DIRECTIONS
Preheat oven to 300 degrees F (150 degrees C). Grease cookie sheets.
Separate egg, reserving egg white. Cream butter or margarine, sugar and egg yolk.
Add vanilla, flour and salt, mixing well.
Shape dough into balls. Roll in egg white, then nuts. Place on cookie sheets about 2 inches apart. Bake for 5 minutes.
Remove cookies from oven. With thumb, dent each cookie. Put jelly or preserves in each thumbprint. Bake for another 8 minutes.

INGREDIENTS
1 cup margarine, softened
1 cup vegetable oil
1 cup white sugar
1 cup confectioners' sugar, sifted
2 eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
2 cups chopped pecans
1/2 cup white sugar for decoration
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, cream together the margarine, vegetable oil, 1 cup white sugar and confectioners' sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, cream of tartar and salt; stir into the creamed mixture. Mix in the pecans. Roll dough into 1 inch balls and roll each ball in remaining white sugar. Place the cookies 2 inches apart onto ungreased cookie sheets.
Bake for 10 to 12 minutes in the preheated oven, or until the edges are golden. Remove from cookie sheets to cool on wire rac

Raspberry Cookies

Ingredients
1-1/2 cups all purpose flour
1 tsp. baking powder
1/2 cup unsalted butter
1/4 cup sugar
1/2 tsp. almond extract
1 tsp. vanilla extract
waxed paper
1/2 cup red raspberry preserves

Instructions
Preheat oven to temperature 350°F. Combine flour and baking powder in a bowl
and set aside. Combine butter, sugar, almond extract and vanilla
in a bowl and mix thoroughly. Cut into flour mixture. Form dough into a
ball. Pinch small pieces (2 Tbs.) of dough off and roll into balls.
Place balls between 2 sheets of waxed paper. Using a rolling pin, flatten
each ball into a circle, 1/4 inch thick. Dot the center of each circle
with 1 tsp. raspberry preserves. Fold cookie in half and pinch ends together.
Place cookies on a nonstick or lightly oiled cookie sheet. Bake
12 minutes or until bottoms are lightly browned.

BITS 'O BRICKLE COOKIES

1 c. light brown sugar
1 c. white sugar
1 c. butter
3 eggs
1 tsp. vanilla
1/2 tsp. salt
2 tsp. soda
2 tsp. cream of tartar
3 1/2 c. plain flour
1 (6 oz.) bag Heath Bits 'O Brickle almond chips

Blend first five ingredients. Add 4 dry ingredients; mix well. Add brickle chips and mix. Drop by teaspoonful on greased cookie sheet. Bake 10 to 12 minutes at 350 degrees. Makes about 4 dozen cookies.

for my peanut butter-oatmeal cookies
BAKE: 10 min per batch
oven temp 375 degrees
3/4 cups of butter
1/2 cup of peanut butter
1 cup of granulated sugar
1/2 cup of packed brown sugar
1 teaspoon of baking powder
1/2 teaspoon of baking soda
2 eggs
1 teaspoon of vinilla
1 1/4 cups of all-purpose flour
2 cups rolled oats
1 cup of chopped cocktail peanuts


step 1: In a large mixing bowl beat butter and peanut butter with an electric mixer untill combinded . then add granulated sugar, brown sugar, baking powder, and baking soda. beat until combined, scraping sides of the bowl if occasionally. beat in eggs and vinilla untill combinded. beat in as much of the flour as you can with the mixer. stir in the remaining flour and stir in rolled oats and peanuts.

2: to cook put 2 inch rounded ball of dough onto an ungreased cookie sheet ( spread each ball out 2 inches away from each other) bake for 10 min at 375 degrees ( or until edges are lightly browned
