What kind of bean recipe do you want? How about soup beans in a crock pot. Soak you beans over night, put in crock pot in the morning, add some chicken stock to cover the beans, add onions, garlic powder, salt, pepper. Then you can either add salt pork or even a good ham bone that still has ham on it. Cook on high for about 6 or 7 hours. Take the ham bone out and debone the meat and then put the meat back in the beans. If the beans are not thick enough add some corn starch mixed with water to thicken it up. Then make some corn bread and enjoy. Need any further information feel free to e-mail me.

Baked-Bean Style Bean Soup:

½ day ½ day prep
6 servings

8 cups ham stock
4 cups white pea beans (navy beans)
1 cup yellow split peas
3-4 bay leaves
2 teaspoons crushed black peppercorns
4 tablespoons molasses
5 tablespoons tomato paste
2 cups peeled diced carrots
2 teaspoons ground ginger
1 cup diced ham
salt

1. Wash and pick over the beans, and put them in a pot with enough water to come up above them by 3 or 4 inches.
2. Bring to a boil, turn off the heat, and soak overnight.
3. In the morning, drain the beans and add the ham stock and the split peas, bay leaves and pepper.
4. Bring to a boil then simmer gently until the beans are tender.
5. Use a little stock to thin the molasses and tomato paste, and stir it into the soup.
6. Add the carrots and ginger, and continue to simmer the soup until the carrots are tender.
7. Add the ham, and add salt to taste (which will likely only be needed if your ham is unsalted.) Add water if the soup gets too thick; stir frequently to prevent scorching.
8. Bean soup is best the day after it has been cooked.

Real baked beans:
Tall can of pork n beans
brown sugar
ketchup
1 onion
1 green bell pepper
water...enough to make thin, but not real thin, because it will
thicken up as it is cooked.
Preheat oven to 400 degrees

I would suggest using an aluminum disposable pan
pour your beans into pan, remove that fat mess
dice your onion & Green pepper
put about 1/4 or a tad more of the brown sugar in beans
add about 3/4 to 1 cup of ketchup
mix all this well, and make sure you dont have large lumps of browm sugar.
Place beans in preheated oven and cook beans until onions are transparent, and green peppers are tender.

you will have to stir beans while cooking so that they will not stick.....so when you see your beans begin to bubble around the edges....stir, and you will want to stir every 15-25 min, to keep them from sticking to pan. You will now have a new family favorite, Oh and you can add some bacon slices to the top if you want, I typically don't, but that is just me

White beans with ham - take a pound of white beans (navy or great northern). Rinse, cover with water and bring to a boil. Once boiling, cover them and shut them off, leaving them for an hour. (You can skip this step by rinsing them end them letting them soak in water over night). Drain off the soak water and cover with water and add some ham chunks. Simmer. covered, for an hour or so until the beans are tender, adding water if necessary so they don't dry out. Serve with fresh cornbread. Yum!

Bean Fritters with Hot Sauce

1 cup dried black-eyed peas
For hot sauce
2 red bell peppers, chopped
1 medium onion, chopped
1 medium tomato, chopped
1 teaspoon minced fresh habanero chile (with seeds)
1 teaspoon salt
1/4 cup vegetable or peanut oil
1/2 to 1 teaspoon dried shrimp (optional), ground

For fritters
1/2 medium onion, finely chopped
1/4 teaspoon minced fresh habanero chile (with seeds)
1 large egg
1 teaspoon salt
6 to 8 tablespoons water
6 to 8 cups vegetable or peanut oilv

Prepare peas: Soak peas in water to cover by 2 inches for 8 hours. Drain in a colander.
Make sauce: Purée bell peppers, onion, tomato, chile, and salt in a food processor.

Heat oil in a 10-inch heavy skillet over moderately high heat until hot but not smoking, then cook purée over moderate heat, stirring, about 8 minutes. Stir in ground shrimp. Cook, stirring occasionally, until most of liquid is evaporated, 3 to 5 minutes more.

Make fritters: Purée drained peas, onion, and chile in a food processor until as smooth as possible and blend in egg and salt. Blend in 6 tablespoons water until smooth and fluffy, adding remaining 2 tablespoons water if necessary to form a batter just thin enough to drop from a spoon.

Fry fritters: Heat 2 inches oil in a 4-quart Dutch oven or a wide 4-inch-deep heavy pot until a deep-fat thermometer registers 375°F, then gently drop batter by tablespoons into hot oil, forming 8 fritters. Fry until golden, about 1 1/2 minutes on each side, and transfer to paper towels to drain. Make more fritters in same manner, returning oil to 375°F between batches.
