i'm a mom of 2...both under 2 years of age. what should i make for dinner tonight? i need quick, fast and healthy recipes.

Make boxed mac n cheese and stir in cut up hotdogs.

It would be healthy if you added a veggie on the side and a glass of milk.

Crunchy Onion Chicken

(chicken, egg, Onions)


1 1/3 cups French's® Original or Cheddar French Fried Onions
4 boneless skinless chicken breast halves
1 egg, beaten


Directions


1. Place French Fried Onions into plastic bag. Lightly crush with hands or with rolling pin.
2. Dip chicken into egg; then coat with onion crumbs, pressing firmly to adhere. Place chicken on baking sheet. Sprinkle with additional crumbs, if desired.
3. Bake at 400°F for 20 minutes or until no longer pink in center.

Buy French's crispy onions (they are in the taco/rice aisle in a can) and there is a quick recipe on the back of the can to make baked crispy onion chicken cutlets. SUPER easy. Very flavorful. Kids LOVE this recipe!!! So do i

I'll let you in on my secret microwave jambalaya recipe.

1-2 chicken breast(s)
2 Cajun-flavor smoked sausage, andouille or sage sausage in a pinch (brown first)
1/2 package of frozen shrimp
1 package of Minute or Uncle Ben's Rice, Spanish Style
1/2 teaspoon Creole or Cajun seasoning, or to taste (optional, you can also use cumin, paprika, cayenne and S&P.)

Drain chicken and sausage; place meat in a 1-quart, microwave-safe bowl. (glass is best)

Cut sausage into bite-size pieces; add to chicken.

Open rice pouch and pour into same bowl. Microwave on HIGH for 90 - 110 seconds. Taste, and stir in Creole seasoning, if using.

Total time: 15 minutes.

we're having taco salad.
For the taco shells, you just drape each flour tortilla over a wadded up ball of aluminum foil and stick it in the oven for about 5 mins, it crisps up when it cools.
Then in a skillet you cook lean ground beef with chopped onion. Drain any fat, add a tablespoonful of chili powder and 1/4cup of salsa. Mix it up and divide into taco bowls. Top with lettuce, chopped tomatoes, green onions, jalapenos, avocado, more salsa, sour cream, ranch dressing, shredded cheese, whatever you like!
Yummy and fun for kids cause you get to eat the bowl too!

ham steak cooked in a skillet with a little coca cola and a couple of table spoons of brown sugar...with butter and herb mashed potatoes, green beans, and blue berry muffins.
