My favourite easy way is
1 tablespoon butter
3 tablespoons brandy
1/2 cup whipping cream
2 teaspoons drained green peppercorns in brine, coarsely chopped
1 teaspoon Dijon mustard

Bring brandy to boil, add cream and green peppercorns and boil until reduced to sauce consistency, about 2 minutes. Whisk in mustard. Season sauce with salt if necessary.

Roasted Garlic Peppercorn Sauce

INGREDIENTS
1 whole head garlic
1 teaspoon olive oil
2 tablespoons butter
1 1/2 tablespoons all-purpose flour
1 1/2 cups milk
1/2 teaspoon salt
1 tablespoon ground mixed peppercorns
1 pinch ground nutmeg
DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C). Slice off the top third of the head of garlic so the tips of the cloves are exposed. Place in a small baking dish, and add just enough water to cover the bottom of the dish. Drizzle the olive oil over the top of the garlic, then cover with a lid or foil. Bake for 45 minutes.
Melt butter in a saucepan over medium heat. Mix together the flour and milk so there are no lumps, and pour into the pan with the butter. Bring to a boil, and cook, stirring constantly until thickened, about 5 minutes. Squeeze the garlic cloves from their skin, and mash. Stir garlic into the sauce, and season with salt, peppercorns, and nutmeg.

Peppercorn Sauce

2 tablespoons butter
2 tablespoons chopped shallot or green onions
2 tablespoon crushed green peppercorns
1/2 cup brandy
1/2 cup heavy cream
Salt and pepper to taste
2 tablespoons chopped fresh dill

In a medium frying pan over medium heat, melt butter. Add shallot or green onions, green peppercorns and saute until onions are soft. Add brandy and cook until liquid is reduced by half. Add cream and simmer for 2 minutes. Season with salt, pepper, and dill.

Garlic Peppercorn Sauce

Makes 5 cups sauce

2 (12 ounce) bottles chili sauce
1 cup catsup
1 teaspoon freshly ground coarse black pepper
1 teaspoon garlic salt
1 tablespoon brown sugar
1 tablespoon lemon juice

1. Place all ingredients in a saucepan.
2. Bring to a boil and simmer 10 minutes.
3. Pour into bottles and store in refrigerator.
