i recently had eggplant rollatini in a restaurant and the filling (ricotta + ?) was amazing! smooth and tasty! it didn't have any of the grit i have when i use it. any ideas?

Is it possible that instead of ricotta it was Marscapone cheese? Otherwise I would use a blender or food processor

I add fresh eggs, parmesan, salt, pepper, parsley and mix it together in the mixer. The brand of ricotta makes a difference too.

I run mine through the food processor... I do this with cottage cheese as well for a less expensive cheesecake!!

Definitely a food processor as first choice. A blender if you don't have that.

try a little milk and use a processor.
