A Ruger Mini-14 and Ruger Mini-30 - the 14 is in .223/5.56 NATO, while the 30 is in 7.62x39.
You can get the new Ranch Rifle models brand new, for less than MSRP in the $500-600 range at a good retailer - used but still in good shape will cost even less. If you purchase a used one, make sure the barrel hasn't been shot out by someone doing rapid fire and burning it up.
Ruger Mini models are extremely well built, reasonably accurate, and simple to maintain. They are based off the same gas-operated rotating bolt action of the M1 Garand and M14, so they are extremely reliable and both will eat Mil-Surplus ammo no-problem.

Yep, like the others said, for 7.72, any AK variation is a good bet. For .223 Mini-14's are reasonably cheap and pretty decent quality.

A Saiga, in both caliber, and even in the .308 and 5.45x39 calibers is an excellent choice for a backup rifle, just in case your primary is down.
