can anyone tell me how to can with these type of jars? i made home-made salsa.yum! have clean jars & lids with new rubber ring gaskets...now what?

i am using the old style jars with the glass lids and the wire bail that is attached to the jars that snaps down over top of glass lid.i bought new rubber gaskets.

After your jars are clean and steril your new lids boiled (you really don't need the rubber gaskets that is to say if you are using the OLD style), I don't use them since they are almost impossiable to find these days. Fill your jars with your salsa (to shoulder) add your lid clamp them down (the wire that is) and into a hot water bath for 15-30 minutes

These jars are nice to give away as gifts, I found that it is so much easier just to use the new jars and decorate them with fabrics.

I cannot say I ever bathed any tomato product for 45 minutes. It really doesn't need to bath that long. Tomato's are high acid. (Heck I still have tomato juice my great grandmother canned over 50 years ago and yes it is still good!)

Jean is right though ball canning book is a great investment. I think walmart still carries them in the fall. You can also go to their web site for advice.

If it is a cooked salsa it needs to make sure the jars are clean, fill them, place lid with rubber ring then put on the ring. Place them in a boiling water bath in a home canning container with the jar separator for forty minutes. When they are done remove them carefully and place them on a counter top until you here the jar lids make a little pop, this means they are sealed well. If it is a refrigerator salsa, place the rubber gasket lids in hot water for a few seconds, place them carefully on jars and seal with ring. If we are talking about the same kind of jars. If they are the really old ones that actually clamp on I would go to the Ball Jar canning web site.
