and how would you write tanjoobi in katakana? Im not aware of any "jo" in the katakana chart

Birthday.
Desu is less of "is" and more of a polite sentence ender. It is used when the speaker is trying to be polite but his/her sentence did not end with any verb allowing the ~masu form to be used.

Tanjoubi in katakana would be written as タンジョウビ, but it's a Japanese word and doesn't normally appear in katakana.
By adding "yo" to "ji" you create the sound "jo".

Tanjoubi o Medetou = happy birthday ( thought you might be interested) as for Desu, it's kind of like a literal period but it different...yeah
Desuka - 'ka'makes the sentence a question
Desuyo - 'yo' makes it almost like an exclamation point or "Ya know!"
