Why are pistachios dyed red?
Years ago, when all of the pistachios in the United States were imported, the shells of the nuts were often blemished due to the type of processing done in the foreign country.
Americans like "pretty" foods, and the importers thought the nuts would sell better if the blemishes didn't show. They came up with the idea of spraying red food coloring on the nuts to make the shells a consistent color. The coloring of the shells was so common, that many people thought the color of the pistachio shells actually was red. The natural color is a light beige. The red food dye is known as a "marketing cosmetic".

Originally pistachios were dyed red because they were sold in vending machines just like peanuts were and people had a hard time telling the difference. So the pistachio people dyed the pistachios red! Why the still do it, I don't know, but more and more I see pistachios in their un-dyed state, though around St. Patrick's you can find them dyed green.

Red pistachio nuts are not as common as they were in years past. The reason is that most pistachios are now picked by machine. However, in earlier times, most pistachios were picked by hand and they were routinely colored red to hide stains and blemishes on the shells caused by hand picking. Nowadays, most pistachio are sold in their natural tan colored state.

i have no idea, they don't taste any different - I guess it's for the same reason pistachio icce cream is dyed neon green (whatever that reason is) - perhaps it's to hide discoloration
