I'm looking for a sauce for pasta that isn't a tomato sauce, or have any type of lemon or mushroom in it. Maybe a simple wine sauce that's not too strong but has a nice flavor to it, it's for a pasta with mostly vegetables and chicken. I don't mind garlic or onions, but I need something that can spice up what can be a very boring pasta dish.

I am allergic to tomatoes, so I have some alternatives.

Sautee onions and garlic in a little olive oil until translucent, add some spinach or swiss chard, and cook until wilted. Add salt, fresh ground pepper, and turn off the heat. Melt some cream cheese in the heat left in the pan. Thin with a little milk, if desired.

Sautee garlic and onion in butter. Add parsely, rosemary, and thyme (fresh is best) Stir in some veggie stock and let simmer until reduces. Thicken with a little cornstarch disolved in water, or a couple of tablespoons of fresh cream

Alfredo sauce-sautee some garlic and onion in olive oil. Stir in 2 cups milk, 1/2 cups grated parmesan cheese and some fresh basil. Stir until melted

Pesto sauce. In a blender or food processor, whiz together a few handfuls of fresh basil, some garlic, salt, pepper, and a handfull of pine nuts. Add olive oil until desired consistancy

1/2 pint heavy cream

In a large frying/saute pan add oil, butter and garlic, saute on low flame until oil starts to bubble.
Add tomatoes, salt and pepper.
Cook covered on a low flame for about 30 minutes.
Add vodka.
Cook uncovered for 25 minutes.
Add prosciutto-- cook 5 more minutes.
Add basil and heavy cream-- cook just 5 more minutes.
SERVE IT NOW!
I like this over penne pasta.
I only use Barilla.

Try blending an alfredo sauce with a little marinara. The result is a heavenly creamy and flavorful sauce that goes with just about anything. You might also consider a pesto sauce, which is basil, olive oil, pignolia nuts, and fresh parmesan....very very good!
