You can't go wrong with Pasta, this recipe you can add or subtract the main ingredients, if your swap out anything just keep it in the same proportion. You didn't mention what she liked, so:

Pasta Primavera

Ingredients:
1/3 cupChopped onion
3 tbspButter
3 tbspFlour
1 cupWater
2Medium carrots, pared and sliced
1 tbspChicken flavor instant
Bouillon
3/4 tspBasil leaves
1 cupBroccoli flowerets
1 cupSliced fresh mushrooms
1 cupSliced summer squash
1 cupHalf-and-half
1/4 tspPepper
1/2 packageFettucini cooked and drained
Grated Parmesan cheese, optional

Preparation:
In large saucepan, cook onion in butter until tender; stir in flour until smooth, Add water, carrots, bouillon and basil; bring to a boil. Reduce heat; cover and simmer 5 minutes. Add broccoli, mushrooms and squash; cook 5 minutes. Add half-and-half and pepper; cook and stir until slightly thickened. Serve over hot fettuccini. Garnish with cheese if desired. Refrigerate leftovers.

Make her a nice pasta, al dente, of course. Go to the store and look at all the sauce choices, normally I would not suggest buying a store bought sauce but since you're trying so hard......LOL.........anyway, by a nice Al Fredo sauce and you can toss it with the cooked pasta or serve it on the side. If she likes chicken, make some boneless, skinless chicken breast (cook in olive oil and garlic) and serve that too, you can even cut it up and mix with the pasta. A nice garden salad and a loaf of crusty bread and you're good to go. Have some sherbet for dessert.

Pasta alla puttanesca
3 tablespoons extra virgin olive oil
1 onion—finely chopped
2 cloves garlic—finely chopped
4 anchovy fillets—chopped
1 small red chili—deseeded and finely chopped
2 teaspoons capers—rinsed and drained
8 pitted black olives—quartered
14 oz (420g) canned tomatoes—chopped
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
1 tablespoon finely chopped fresh flat-leaf parsley
7 oz (200g) spaghetti


HEAT 2 tablespoons of the oil in a frying pan over a medium heat and cook the onion for 6 minutes, stirring occasionally. ADD the garlic and anchovies and cook for a minute, stirring to break up the anchovies. ADD the chili, capers, olives, tomatoes, salt and pepper, and bring to the boil. REDUCE the heat to medium-low and simmer, uncovered, for 10 minutes, stirring occasionally. WHILE the sauce is simmering, cook the pasta. DRAIN the cooked pasta into a colander and put the sauce in the bottom of the pot. TOP with the hot pasta, parsley and reserved tablespoon of olive oil, and toss together gently to combine.

Pollo alla diavola
1 young chicken (about l 1/2 lbs.)
olive oil
salt
pepper

Wash and dry the bird. Cut it along its back and remove the breastbone. Turn it over and pound the breast with a meat mallet without crushing it. Cut two holes in the skin beside the chicken's tail and insert the end of the thigh bones into them, sprinkling generously with oil on both sides. Place on a gridiron or a metal griddle. Place a weight over the chicken to keep it flat. Reduce the heat to allow the chicken to cook thoroughly. Baste often with oil, using a brush or a rosemary sprig. Once it is cooked on one side, turn it over and finish cooking (should not take more than 30 mins.) Salt and pepper on both sides and serve

Easy Lasagna

1 (400 g) can tomatoes, in juice
1 (1 1/4 ounce) packet onion soup mix
1 teaspoon beef stock powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon green herb stock powder
4 tablespoons tomato paste
1 tablespoon soy sauce
1 garlic clove, crushed
450 g beef mince
1/2 cup water, hot
150 g small lasagna noodles
1 1/2 cups cheese, grated
1/2 cup dried breadcrumbs
parsley, chopped, to garnish



1. Pour tomatoes and juice into a large bowl and cut the tomatoes into pieces.
2. Add soup mix, stocks, herbs, tomato paste, soy sauce, garlic, mince and water.
3. Mix thoroughly.
4. Grease a round casserole dish (21cm) and spoon a third of the meat mixture into it. Arrange half the noodles on top and cover with another third of the mixture. Spread the remaining noodles evenly and top with the remaining meat mixture. Cover and cook on HIGH for 12 minutes.
5. Stand covered 15 minutes.
6. Uncover and cook on HIGH for 3 minutes.
7. Spread the cheese over the top and continue cooking for 1 1/2 minutes.
8. Sprinkle with dried breadcrumbs and parsley.
9. Stand uncovered for 5 - 10 minutes before serving.

Try Mini Taco's !

24 wonton wrappers
1 lb hamburger
1 package taco seasoning
1/2 cup salsa or picante sauce
3 tablespoons salsa
1 cup shredded cheese (cheddar is good, but a mexican blend would be good too)
sour cream (optional)
olives (optional)
guacamole (optional)

Cook hambuger until browned.
Drain the fat and stir in taco mix and 1/2 cup salsa/picante sauce.
Simmer for 3-5 minutes.
Press wonton wrappers into mini muffin cups.
Spoon beef mixture in cups and top with the 3 tbls of salsa and cheese, evenly divided.
Bake in preheated 425F oven for 8 minutes, or until the wontons are nicely browned.
Serve with extra salsa, sour cream, olives and Guacamole if desired.

I’d try and find out what she likes if you don’t already know. Does she not like onions or veggies? Or does she not like her food touching? Maybe a nice spaghetti w/ salad and breadsticks. Or you could make some baked chicken w/ mashed potatoes and spinach or broccoli. Served w/ dinner rolls and salad as an option.

What about some nice sausages and mash with onion gravy. Can be very impressive if you buy the lovely nice sausages with real meat inside and some herbs too.

Otherwise you could just do steak, baked potato and home made coleslaw. Always tastes nice.

Fix her something good like some fried or baked chicken with some mac and cheese and some thing green, or some pasta, that always work, or even some cheese potatoes with something else, she has to like something....
