Some products are labeled polska kielbasa, others smoked sausage, and they come in beef, turkey and "standard" varieties which seems to include a bit of beef, pork and maybe turkey, too. But what makes them distinct, and thus labeled differently?

Polska kielbass is a very spicy sausage and NOT smoked. Smoked sausage may not have too much spices and its flavoring comes from the smoking process. The base of the meat can vary. Producers want a wide variety market so, due to health/religious reasons, some people do not eat pork or other meats. Turkey is a more leaner meat and people who want that specific variety will check all the P.K/Smoked/Cajun/etc. to see if it only has turkey.

Now if a particular type or meat type is not selling then the store will sell accordingly. I don't eat pork and very few stores, locally [rural area], do not have those choices. I have to go to the bigger cities.

Polska Kielbasa

If you have ever had REAL Polish kielbasa, there is no comparison between it and what they sell as Polska kielbasa. Real keilbasa is not smoked and the casing is soft. It is normally sold uncooked. You can usually find it in neighborhoods where the majority of residents are Polish. I cook mine in the oven. I use ginger ale and a few tablespoons of mustard. Cook and turn until it starts browning.

Kielbasa orginated from Poland and is more of a pork product. It usually isn't placed in a smoker, hence smoked sausage. I think Kielbasa has more flavor.
