YES!!! Its waterproof....and a bathroom is somewhere that its a def. You won't be sorry!

No I have been working drywall for years and working with a guy thats been hanging finishing drywall for 40 years. Make sure any area around the shower and bath area are Green board and the back of the toilet and sink should also be but everything else can be plain white board. You should actually use Purple board because its also mold resistant.

No. Your Local building codes require certain materials in bathrooms. (Codes vary from area to area) Greenboard is usually required in the tub/shower area. It is not required for the ceiling in this area however, or the rest of the room. A phone call to your code office can save you problems later and a lot of worry. And it's free.
