I have been out of the country for three years and my loans are in default. Once I get back to the states, I can bring them current no problem. Problem is, at this point I don't even know who owns my loans anymore. Where do I find out who to talk to?

Your best course of action is to contact the original lender,and ask them who they pass on defaulted loans to ?
Alternatively you can speak to your bank or a financial adviser to trace them as no doubt they will have sent some correspondence to you. did you need a Guarantor ? for original loan. they may have tried to contact them or your old address.

Go to the last place you know of that owned your loan and ask them.
You could also do a credit check. It would be on there as well.

Don't you get mail from who has your account? I get mail from them every day!!! Call the school and talk to the Bursar's office and explain your situation. You can always file your taxes and let me tell you they will find you.
