If you're talking about the Lord's Supper, the reason why Jesus is bread is because 1. it's edible 2. that's how jesus started it 3. it represents his body. He promised to be in his body and blood, which is bread and wine, not in paper!
The reason why he is called the Word of God is because the whole Bible is about Him and He fulfilled the Word of God by dying on the cross and saving us from eternal death.

Jesus is the Written Word revealed to man in the Flesh. The Word is the Written Jesus revealed to man in the scriptures.

Jesus asked us to have a communion in remembrance of Him so that we remember what He did for us. The bread is His body which was broken for us, and the wine is His blood shed for us...for forgiveness of our sins.

The bread is a symbolization of something non-meritorious.
Something that you do, it is what it is. It fills you up.
The word of God is supposed to fill you up spiritually.
