~~~~~~~~~~ Vanilla Cupcakes ~~~~~~~~~~
Makes about 10 pieces
125g butter, softened
1 cup sugar
3 eggs
Seeds from 1 vanilla pod, or 1 tsp vanilla extract
1 1/2 cup plain flour
1 tsp baking powder
1/2 cup milk
Lemon icing:
1 cup icing sugar
2 tbsp lemon juice
A splash of milk, to adjust consistency
1. Preheat oven to 170 deg C (non-fat assisted). Line cupcake tray with cupcake peper cups.
2. Place butter and sugar in a mixing bowl. Cream both together using an electric mixer.
3. Add eggs and vanilla seeds (or extract) and beat until well-mixed.
4. Sift plain flour and baking powder into another bowl.
5. Add a third of the flour into the creamed mixture and mix well using the electric mixer. Add a splash of milk while mixing.
6. When the ingredients are well incorporated (but do not over-beat), add another third of the flour and again, mix well while adding another splash of milk.
7. Repeat process one more time, using up the remaining flour and milk.
8. Spoon cake mixture into cupcake paper cups to half full.
9. Bake for 25-30 minutes. Allow cupcakes cool completely before icing.
10. To make the icing. Mix icing sugar and lemon juice until smooth correct consistency by adding more icing sugar (for firmer icing) or a splash of milk (for more liquid icing)
11. To ice cupcakes, drizzle 1 to 2 tsp of icing on each cupcake. Carefully spread icing over the top of the cupcake.
Finish with decorative candy hearts.

You can do the two together if you make cupcakes with frosting decorated with candy!
Go to walmart and get a mix, follow the instructions...ice and put gummy worms or bears on top of each.
A cool one for kids 3-10 is "mud pie". Chocolate cake with chocolate icing. Mash up some Oreo Cookies and dip each cupcakes icing in the "mud". Put one gummy worm on each "mud pie".
Don't forget to involve the kids in the work! Cooking is a great bonding time for families. I started when I was 4 helping in the kitchen, even if it was only to carry things for mom! I love cooking today and have taught my daughter the art and am now showing my grand daughter who is only 1 but she like to "help" while sitting in her high chair. She is my taste tester! How fun is that!

16 ounces cream cheese, softened (recommended: Philadelphia)

Set up grill for indirect cooking over medium heat. Spray 9 by 13-inch foil pan with cooking spray; set aside.
In a large mixing bowl, beat with an electric mixer on low speed, cake mix, butter, egg, and food coloring until combined. Press cake mixture into prepared pan; set aside.
In a medium mixing bowl, beat cream cheese and sugar on medium speed until creamy. Add eggs and vanilla, beat to combine. Spread cream cheese mixture over cake layer.
Place foil pan in a second foil pan for stability and insulation. Place on hot grill away from heat. Cover and bake 40 to 50 minutes. Rotate pan halfway through baking.
