Depending on what product you're cooking, aromatics are interchangeable unless your Thyme "is" the base of your recipe, i.e. Thyme Chicken. Pick whatever three aromatics you have and go with those, even though they add flavor it's more for the smell of your dish, it excites the olfactory senses. When Grandma was cooking what was the first thing you smelled when you walked into her house.

Thyme has such a distinctive flavour that it is hard to substitute. Summer Savory is probably the most similar. Or if you are cooking lamb then I would use rosemary. Oregano goes well in most recipes too, especially Italian themed ones.

I use a 1/4 teaspoon of dried Marjoram crushed. This is in a recipe for 10 servings. Recipes for cooking can be changed to suit your individual taste. This differs from baking cakes and such where you may ruin the final product by changing amounts or ingredients.
