What is your personal favorite recipe to make with leftover shredded chicken. I've already been to the food websites, but I'm more interested in people's tried and true favorites

This is outstanding, and worth the work!!!!! CHICKEN STUFFED MANICOTTI.
8 manicotti, slightly undercooked
2 cups finely chopped/shredded chicken
4 TBSP parsley 1 tsp thyme
1/2 cup finely chopped celery
1 cup grated Monteray Jack cheese
3 TBSP dry white cooking wine 1/2 tsp salt

Combine all ingredients, and stuff the manicotti.

Sauce>
6 TBSP butter 6 TBSP flour 3cups chicken broth
1 tsp tarragon, crumbled . 1 cup grated Monteray Jack cheese

Melt butter, stir in flour, cook 3 minutes. Slowly add broth, and cook 3 minutes till smooth and thickened. Add tarragon, cheese and salt to taste, cook till cheese melts. Spoon film of sauce on bottom of baking dish (10 x 13 , or larger) leave room for expansion when placing manicotti in dish. Pour rest of sauce over manicotti. Cover with foil. Bake for 40 minutes at 350. Enjoy!!!

Shredded Chicken? Perfect for my Chicken Soto (soup type but yummy)

Shredded Chicken any amount
1 x Onion :finely sliced
3 x garlic : finely sliced
2 slices of ginger (1 inch)
1 x cube of chicken stock or 2 teaspoon of chicken stock
Bit of cooking oil
white pepper
Chopped spring onion (optional)

- Fry all the sliced items in the pot til brown but not burnt
- Once u get the nice aroma, pour in some water for broth
- Add in the chicken cube/chicken stock
- Add in the pepper
- Add in the chicken
- Salt to taste

U can eat it on its own like a soup or u can eat it with rice or rice cube. U can also add chili paste if u like it hot and spicy.

To make rice cube:
- Boil 2 cups of rice.
- Take a flat pan/tray and lay a clean piece of cloth on it. Ensure that it is big coz u will have to cover the top of rice later.
- Put the boil rice on the cloth and flatten the boiled rice evenly.
- Cover the rice with the remaining cloth from the sides.
- Further flatten the rice evenly using your hand or any other tool.
- Chill it in the fridge. Once rice is stuck together, cut and cubed them 2cm x 2cm.

Chilli paste for chicken soto:
7 Small green chilli
3 garlic
- mash these 2 items finely, scoop it up in a small bowl and add 1 teaspoon of sugar, pour in some soy sauce. Stir and mix well and it's done.

How to eat the whole thing?
Grab a bowl, put some rice cube in it, pour in your chicken soto soup and voila. If u want to add the chili paste, just add a little first in your bowl to test your taste bud. Mix them all and enjoy.

Mexican Two Bean Chicken Chili

2 cups (500 mL) chicken broth
1 jar (16 ounces or 430 mL) thick and chunky mild salsa
1 cup (250 mL) tomato sauce
1 medium zucchini, coarsely chopped
1 1/2 cups (375 mL) black beans
1 1/2 cups (375 mL) pinto beans
1 cup (250 mL) whole kernel corn, drained
3 cups (750 mL) shredded cooked chicken
1 garlic clove, pressed
1 1/2 - 2 tbsp (22-30 mL) chili powder
1 tsp (5 mL) ground cumin
Optional toppings such as shredded cheese, sour cream, crushed corn chips or tortilla chips, sliced green onions or fresh cilantro leaves

Directions:
1. Combine chicken broth, salsa and tomato sauce in (4-qt.) Casserole. Add zucchini, beans, corn, chicken, garlic pressed with Garlic Press, chili powder and cumin. Bring to a boil; reduce heat and simmer 30 minutes.
2. Ladle chili into soup bowls using Spoon. Top with desired toppings.

A few of my favorites I like to make with my shredded chicken.
Chicken and dumplings
Sour cream and chicken burritos/enchilades
Chicken lasagna, made just like reg lasagna just using a white sauce or Alfredo sauce instead.
I have recipes for all of these. If you are interested, just write me.
Another quick idea is just chicken and cheese quesadillas or chicken fried rice or stir fry....yum, you're making me hungry! Have a great day!

Shredded Chicken Tacos:

6¼ hours 15 min prep
6 servings

6 chicken breasts
2 cups sliced pepperoncini peppers
1 cup brine, from pepperocini jar
1 sweet onion (sliced)
1 package taco seasoning
2 cups lettuce (shredded)
1 cup cheese (shredded)
1 cup tomatoes (diced)
1 package flour tortillas

1. Combine chicken breasts, pepperoncinis w/brine, onion, and taco seasoning in crock pot.
2. Cook on low for 4-6 hours.
3. Using 2 forks, shred chicken in crock pot.
4. Serve on warmed tortillas with lettuce, tomatoes and cheese.

Mix your chicken with a box or 2 of Stove Top Stuffing, depending on how much chicken you have, add a can of cream of chicken soup, mix well. Sprinkle mozarella cheese on top, bake at 350 for about 20 minutes....quick, easy, cheap, and delicious

I love adding a little salt, pepper and mayo to make chicken salad for little finger sandwiches. Chicken tacos or BBQ chicken Nachos are also my favorites.

Mix it with some Ricotta cheese, parmesean cheese, sauteed portabelllo mushrooms, blanched/drained spinach, salt and pepper, and use it to make any of the stuffed pastas (ravioli, tortellini, agnolotti, etc.)
