Depending on the manufacturer, there may be little or no difference. If you are comparing two brands, the key differences will be in price and workmanship. Raw lumber cost is such a small factor in determining a cabinet's cost, that it can usually be disregarded. My pine cabinets cost more than most makers' cherry pieces. Why, because they are made better. Also, when you start figuring the cost to do a complete Kitchen remodel, labor is about 60%. That covers the installers, and electrician and plumber. Usually people will redo their floor and make other upgrades, like electrical or to windows and doors. All materials are reduced to 40% and cabinets usually come in at about 25%. So, the raw lumber cost becomes quite insignificant.

I work at a Hardwood Lumber yard, Birch is a more expensive wood than Maple in the South, so the Birch would be more expensive. If you life in another part of the country that may not be true. It depends on the availibilty of that specie in the area that you live.

Maple is going to be more durable therefore it will be more expensive. My boyfriend is a carpenter and I do listen to some of the things that he rambles about with wood and finishing and whatnot... Do you want light or dark? Maple is dark while birch is very very light. I hope that helps- email me with any other questions!
