I personally feel that it's the way you prepared the food. If you fry that chicken in canola oil instead of corn or vegetable you'll be fine. Prepare those greens with smoke turkey. Can't say how you make mac-and cheese healthy. Just don't eat soul food every Sunday and you'll be fine.

Yes, it is bad. If you modify the recipe it makes healthier. Instead of fried chicken bake it. You can use low fat cheeses for the macaroni. Greens are very healthy it's just what you put in them. You can use whole wheat grains also.

Any soul food I've ever cooked is definitely not good for the ol' heart and cholesterol. Grease, lard, bacon, frying,.... However, it is great comfort food and very satisfying.

And I don't know of a way to make mac and cheese healthier either. The closest "healthy" recipe I have uses evaporated milk.

i have to agree, its all bout the way u prepare the food, what u eat, and how much of it u eat its not bad for u unless u make it that way.
