They are both Protestant so the major part of their beliefs are similar. However there are some major differences.

Baptist is a lot stricter. Many Baptist churches believe it is wrong to drink alcohol at all. Most are against dancing and secular music. Only members of that church or at best, Baptist denomination are invited to take communion. Baptist churches focus a lot on fire and brimstone. They are more energetic, a lot of moving around, laying on of hands. The preacher is a lot more stand-offish. He often has a pulpit far away from the congregation--more like how it was 100 years ago. Baptist are very into tradition as well. The path to heaven is works, works, and more works. You can believe and say you are saved, but if you do nothing to spread the word you are not going to heaven.

Methodist churches (my family is all Methodist) I'm sad to say are very very loose in their interpretation. Basically, they don't really have a stance against anything. Anyone who believes in Jesus is invited to take Communion, not just protestants or just Methodists. The path to heaven is mostly in thoughts--belief that you are saved through Jesus. They don't necessarily believe homosexuality is wrong, they don't necessarily believe that those of other religions are going to hell. A favorite expression in the Methodist Church is "the church neither condemns nor condones that behavior".
