The colour question should be expanded to encompass all things. Why are apples green for instance? Everything has a colour of light bouncing off the object and your eye interprets it as "yellow" or "green" - by the way, what is yellow to one person, could be a slightly different yellow to another.
I'm guessing the "yellow" light has something to do with perhaps the high level of potassium and water within a banana...perhaps when growing this changes the skin to this colour. Another one is that perhaps the colour yellow in nature signifies danger - therefore defending itself against animals trying to eat it. Obviously some still do though...

Not all bananas are yellow there are some that are red and the green ones will turn yellow when they ripen. Sometimes they are called plaintains.
You can bake them when they are green or red with some sugar and they are almost like a potato or taro in consistency at that stage.
Banana is more chlorophyll prominent which means green is it's main color. When it gets the needed sunlight for its ripening the chlorophyll dies and other group of pigments in the cells called the Anthocyanins start to show the prominent color, which is yellow.

Banana skin turns from green to yellow to black during stages of ripening. The banana itself is a creamy colour as it ripens and then turns off-cream and then black when it starts to become over-ripe or bad.
