In pancakes, I usually add a little bit of baking powder and cinnamon and my pancakes come out perfect.

Try this recipe and your pancakes will hopefully be light and fluffy

Canadian Buttermilk Pancakes with Maple Syrup
4 fl oz (120 ml) buttermilk
5 oz (150 g) plain flour
½ level teaspoon baking powder
pinch of salt
3 large eggs, beaten
about 1-2 oz (25-50 g) lard
To serve:
lots of pure maple syrup and crème fraîche

First sieve the flour, baking powder and salt together in a roomy bowl and make a well in the centre. After that, whisk the buttermilk and 3 fl oz (75 ml) cold water together in a jug and gradually whisk this into the bowl, slowly incorporating the flour with each new addition of liquid. Finally, add the eggs a little at a time until you have a smooth batter.

Now place a large, solid frying pan over a medium heat, add 2 teaspoons of the lard and heat it until the fat shimmers. Then, using a tablespoon of batter per pancake, place 2 or 3 spoonfuls into the pan.

They will take about 1 minute to turn golden brown, then turn them over using a spatula and fork, being careful not to splash yourself with the hot fat. Give them another 45 seconds on the other side, by which time they should have puffed up like little soufflés, then briefly rest them on some kitchen paper to absorb any excess fat.

Repeat this with the rest of the batter, adding a little more lard if necessary. They will keep warm in a low oven, but to enjoy them at their best, have everyone seated to eat them as soon as they come out of the pan.

I have tried a lot of different recipes and a lot of boxed pancake mixes. This is by far the fluffiest. A lot better than IHOP and other breakfast places I've been to.

Fluffy Pancakes (Source: recipezaar.com by Nell Majeran)

1 1/4 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon salt
1 1/3 cups milk
3 tablespoons vegetable oil
1 egg

Mix all dry ingredients together in a bowl (I use a 4 cup measuring cup).
Mix milk, oil and egg in smaller bowl (I use 2 cup measuring cup).
Mix liquid ingredients into dry ingredients.
Make 4 inch pancakes in a medium heated non-stick pan or griddle or use a small amount of oil in regular pan.
Cook until golden brown.
Serve with butter and syrup or your favorite topping.

Fluffy Canadian Pancakes
"Fluffy pancakes that melt in your mouth. Separating the eggs and folding the whipped whites into the batter, nothing is better. Grills up to a golden brown."

INGREDIENTS
1 cup all-purpose flour
1 tablespoon baking powder
1 cup milk
3 egg yolks
3 egg whites

DIRECTIONS
In a medium bowl, combine flour and baking powder. Stir in milk and egg yolk until smooth.
In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

INGREDIENTS:

2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, slightly beaten
1 1/2 cups milk
2 tablespoons melted butter
PREPARATION:
Sift together flour, baking powder, and salt. In a separate bowl, combine egg and milk; add to flour mixture, stirring only until smooth. Blend in melted butter. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake.
Cook until brown on one side and around edge; turn and brown the other side. Recipe for pancakes serves 4.

make the batter out of 1/2 aunt jemima, and 1/2 white cake batter. Make sure it has a thin consistency and use something with a pouring spout to pour them in the pan. In just a thin layer. They are great. Especially if you put an egg over easy on top. and cover with syrup.

There is only one main ingredient and that is flower.

Lily's work particularly well. The other main ingredient is egg.

Just boil, fry or scramble and add to the mixture,

The last main ingredient is milk, which i substitute with homemade mans milk. It's a bit salty but thickens the mixture up.

The lnext main ingredient is the topping or spread. Marmite mixed with freshly grated extra hot horseradish and caster sugar.
