Im a chef and i would like to clear a couple things up for you. yeast added to milk does not create yogurt, a lactic bacteria like streptacocus lactis or lactobactis bulgarias will. when you char red meat over a high heat like above 320 degrees the maillard reaction occurs and thats called carmelization and is what creates the carcinagens and it can be reduced by 75 % by flipping the steak every 15 sec. this was studied in silicon valley cali
I'll give you three chemical reactions
1.Protiens coagulate and denature during the heating process around 160 f. the protien structure is altered, denatured, and is irriversable
2.Starches Gelatinize during the heating process around 140 f
the starch globules soften and they absorb moisture and thicken liquids
3.sugars carmelize above 320 F

I'll give you the most interesting one, published numerous times over the past 20 years by the American Medical Association .
Ready for a surprise ?
Ground beef, cooked to well done creates 5 new chemicals not previously present before cooking . 3 of those chemicals are known carcinogens(cancer causing agents).
So much for the 'well-done' hamburger crowd !!!!

Reaction No.1 : When water is boiled it changes from fluid state to gaseous state i.e, Steam.
Reaction No.2: When water is cooled it changes from fluid state to solid state i.e. Ice.
Reaction No.3: When you add yeast to milk, it turns into Yogurt. Now the physical reactions:-
When you pose such questions to your wife when she is cooking, she throws something on you which is Newton's law of motion: For every action there is an equal and opposite reaction. God bless you.
