I looked everywhere under the hood and I don't see a dip stick for it anywhere. I also looked in the manual and it says nothing about it.

Here is a link to the diagrams that will tell you how to check the fluid.

Your Grand Am is equipped with a 4t40-E or 4T45-E transmission and it does not have a dipstick. The way to check fluid level requires removal of a plug in the side of the transmission while the engine is running and the trans fluid is at a specific temperature.
This is not something for the do it yourselfer as you need a scan tool to be able to look at the fluid temp, and if you take the wrong plug out you will have fluid spraying out under high pressure. Unless you have signs of a leak there should be no reason to check the fluid. If you have signs of a leak then you need to take it in for service anyway

Look on the BACK RIGHT hand side of the Engine Block. You will see a Dip Stick, but it will just look like a Plug with a very small "O" on top of it. (like the Oil Dipstick) Check it while the Engine is at operational tempture while in Nuetral WITH the Emergency Brake on. (you have to do this to get an accurate reading) I would also get someone to push the break pedal and hold it just in case it jumps gear while you are under the hood.
