I purchased several peppermint flavored coffee creamers at Christmas time with a sale by date of March 10 and don't know how many days past that date the product is safe to use.

You shouldn't mess too much with dairy, but my husband works for a yogurt company so I know for a fact that they are very cautious with their sell-by dates. You can eat most yougurts up to a week after they go "bad" and it'll be fine. For your creamers, it depends- I assume they are pasteurised the pasteurised kind that you don't need to keep in the fridge? Is so they're probably ok until, say, the 20th. Use your nose as a guide- if they don't smell right, they aren't.

Anything past the use by or sale by date is not advisable to be used. From personal experience, I accidentally purchased a box of cereal that was about a month short (before) the use by date and the cereal was no longer crisp and had a stale taste to it. So best thing is to avoid using anything past the use by date.

If it is dairy, I go 2 days past due date, if it is juice, I usually go a week past the due date.
