why would people think it's weird?

No, it won't seem weird. It might seem weird to her that you're hand holding on a first date, though--it implies that you two know each other fairly well romantically and are already bf and gf.
Is she ready for that? Are you?

If you like her, why would it matter if people see you holding hands? It's only holding hands. In school, we had to hold hands to go to the hall etc. as a class in groups of two. It won't be strange.

Don't do it!! It has been proven many times that dating a friend or having a relationship with them ruins what you used to have. All of the sudden you feel uncomfortable and all that.
Then again... you're only sophomores so... i guess you have to give it a try and "live and learn"
