A fine textured substance that is a common food ingredient in Europe and most notably used in British cooking. Made from cornflour, salt, flavorings, and annatto coloring, several tablespoons of Custard Powder are combined with 1 to 2 tablespoons of sugar and several tablespoons from a pint of milk all mixed together to form a paste. The remaining pint of milk is then heated to almost boiling in a saucepan at which point the paste mixture is added and continuously stirred while the ingredients are brought to a light boil. The heat is reduced and the Custard is allowed to cool. When ready, the Custard is then served as a dessert or as a filling and sauce for a variety of sweet foods. It can be added to cakes, puddings, pastries, or filled with fruit and served as a fruit custard.

3 teaspoons of custard powder would make one cup of custard. If I only had 3 teaspoons of custard powder I would use 1 tablespoon of sugar, 1 cup of milk, and a little vanilla essence. Heat most of the milk, saving a little, mix the custard powder and sugar into the reserved milk then mix into the heated milk once boiling. Continue to heat until thick. Remove from heat and stir in vanilla.

You must have proper custard cups for this recipe.
Ingredients:
3 whole large eggs, beaten
1/2 tsp. nutmeg
2 tablespoons Grand Marnier, or else, brandy or Cointreau
2 cups whole milk
1/2 cup sugar
2 tablespoons white flour
3 tablespoons margarine
Preheat oven at 300 d F.
Heat up milk in a double boiler half-filled with water over medium heat. Add sugar and turn down heat. Then add margarine, 2 tbsp., melted in microwave.
Take off heat and let cool a few minutes. Add liqueur and stir thoroughly. Then mix flour into water and add to milk. Beat in eggs. Grease custard cups and place in a pan with 1 inch of water around. Pour custard into cups and sprinkle with nutmeg.
Bake for 25-30 minutes. Can be served warm or cold. Coolness enhances flavour of Grand Marnier. Can be served warm with blueberrry sauce-jam mixed with a litle water and butter-or whipped cream.

Cornflour, pinch of salt, and and sugar. This gives you basic confectioner's cream. Add annatto and you have yellow custard. Add cocoa powder and you have chocolate blancmange. Or some red colour and a couple of drops of raspberry or strawberry essence, and also green and mint, yellow and banana, and so on... and you have different flavours and colours for between layers of cake for trifle.
